I know that I haven’t written in forever, but that’s because I’ve been super busy trying to get my new lifestyle in order. For those of you who don’t know, I went pescetarian in February. I always dreamt about the idea of becoming a vegan for several reasons, but always figured it would be way too difficult for me. Then one day my mother made a comment about my weight. (And by the way, Filipino mothers can be super blatant). I was immediately offended because I had been putting in hours at the gym. How could I be gaining weight if I was always working out??? After an honest evaluation, I realized that I hadn’t been eating as clean as I’d thought. A few weeks after watching a few youtube videos, I decided that I was going to make the big leap and go vegan. This way I wouldn’t have to think too hard about if what I was putting into my body was healthy or not. Plus I would also be able to cut my dietary carbon footprint by another 50%.
I did tons and tons of googling/youtubing and figured out how to cook a few basic vegan meals to get started. Whipping up vegan meals is actually easier than you’d think! I just want to clarify that going vegan was not strictly because I wanted to lose weight. I mainly wanted to feel better. I was always feeling lethargic and bloated before. After just two days of being vegan, I started to feel less brain fog and more mental clarity. It’s like your head just feels lighter. I’ve already lost 5 lbs, but honestly, the number on the scale doesn’t matter to me. What matters is that I FEEL great! My energy levels have increased, and I can focus better on any task at hand. Don’t get me wrong, sometimes I still need my naps, but when I am awake I definitely feel more energized. Did I mention that I can eat A LOT of food??? No calorie restrictions here.
